Quiche is a savory cake made mainly with a mixture of beaten eggs and fresh, thick cream (called migaine), combined with chopped vegetables, and meat or fish, which is used to fill a mold previously lined with dough. It is baked in the oven until the dough is cooked.

The word quiche comes from the word Küche in the Lorraine dialect, spoken in the Lorraine region in northeastern France, right on the border with Germany. This term in turn derives from the German Kuchen (pastry). The dialects of central Franconia soften the pronunciation, eventually resulting in the word "kishe", which in standard French is spelled "quiche." It comes in a 28 cm size, for approximately 10 or 12 portions
